Heat stable in standard evaporated milk and Ultra Heat Treated milk formulations
Good emulsifying properties
This ingredient has the following features:
- Good solubility
- Uniform fat content
- Phospholipid content typically 21% of the fat
- Good emulsifying properties
- Low salt content
- Adds a rich creamy flavour
- Heat Stable in standard evaporated milk and Ultra Heat Treated milk formulations
This ingredient can be used in the following applications:
- Recombined Products
- UHT Milk
- Evaporated Milk
- Sweetened Condensed Milk
- Ice Cream
Buttermilk Powder is hygroscopic and can absorb odours. Therefore adequate protection is essential. It is recommended that product is stored at temperatures below 25°C, relative humidity below 65% and in an odour free environment. Stocks should be used in rotation preferably within 24 months of manufacture.
