Consistent Flavour and Smooth Texture
This ingredient has the following features:
- Good solubility
- Heat stable in concentrated milk at in-can sterilisation temperatures
- Low fat content
- Clean flavour
This ingredient can be used in the following applications:
- Use heat-stable skim milk powder with anhydrous milk fat, fresh frozen milk fat for fecombining or unsalted butter as a fat source to make full cream recombined evaporated milk
- Heat-stable skim milk mowder can also be used with heat-stable buttermilk powder to produce recombined evaporated milk of superior flavour, or as a formulation option providing extra flexibility
Skim Milk Powder is hygroscopic and can absorb odours. Therefore adequate protection is essential. It is recommended that product is stored at temperatures below 25°C, relative humidity below 65% and in an odour free environment. Stocks should be used in rotation preferably within 24 months of manufacture.
