SureProtein™ WPC Gelling is ideal for use with SureProtein™ MPCs to enrich yoghurt textures.  With excellent gel strength, WPC Gelling enhances water-binding capacity for extra smoothness.

Water-Binding Capacity

WPC Gelling has excellent gelling capacity.  This is ideal for reducing syneresis in set yoghurt products.

WPC Gelling produces a smooth and creamy texture.  It also contributes an attractive, glossy sheen. 

Heat Stable

Whey Protein Concentrates are hygroscopic and can absorb odours. Therefore adequate protection is essential. It is recommended that product is stored at temperatures below 25°C, relative humidity below 65% and in an odour free environment. Stocks should be used in rotation preferably within 24 months of manufacture.
